Candied Walnuts

Haven’t shared a recipe for a while and thought I would share an easy one.  No, it’s not low calorie but ya gotta spoil yourself a bit.  When I get a chance, I’ll share one that has a few less calories.  LOL

Ingredients
  • 1 ½ cups white sugar
  • ½ cup corn syrup
  • 2 tablespoons butter
  • 4 cups walnuts
  • Zest of one orange
  • 1 tablespoon butter for parchment

Instructions
  1. Line large baking sheet with parchment paper and grease it with 1 tablespoon butter
  2. Mix sugar, corn syrup and butter in large pot.
  3. Heat over medium high heat until completely melted and blended.
  4. Add walnuts.
  5. Continue to cook, stirring constantly until it begins to caramelize.
  6. Mix in zest.
  7. Spread mixture evenly onto parchment paper. Make sure you spread the nuts evenly…you can separate into small clusters.
  8. Allow to cool completely.
  9. Place in airtight container.
  10. Enjoy!!!

    1. LOL Anon...look at it this way...walnuts are good for you and just a few of these will satisfy a sweet tooth. ;)

  5. Not only a yummy recipe but walnuts are very good for you!
    Could you please remind me yet again what 'corn syrup' is? Did we decide it is like 'liquid glucose' or 'golden syrup'? I can't remember for the life of me.

    1. Yes Ami...walnuts are very good for you and I love them! Corn syrup is liquid glucose.

      You can substitute honey for corn syrup...measure for measure.

      You can also make heavy simple syrup...probably about 2 cups of sugar to 3/4 cup water and bring to a boil to make it the same consistency as corn syrup and then substitute measure for measure.

      If you make them, let me know how they turn out...bet your gang would love them. ;)
