Divinity

I haven’t shared many recipes this year.  I remembered, as I was making it today, that I had mentioned to several people that I was going to try and make this for Christmas and they asked if I could share it. So here it is… Winking smile

Ingredients
  • 2 ½ cups granulated sugar
  • ½ cup light corn syrup
  • ¼ teaspoon salt
  • ½ cup water
  • 2 egg whites
  • 1 ½ teaspoons vanilla
Instructions
  1. Combine sugar, corn syrup, salt and water in heavy saucepan. Cook to hard ball stage (260 F / 127 C ) stirring only until sugar dissolves.
  2. Beat the egg whites to stiff peaks.
  3. While beating at high speed, gradually stream syrup over egg whites.
  4. Add vanilla and beat until candy holds its shape (4-5 minutes).
  5. Quickly drop from teaspoon onto waxed or parchment paper.
Notes
  • Makes about 48 pieces – depending on size.
  • When the syrup mixture gets to approximately 200 F, start beating the egg whites otherwise, they lose the best form
  • Adding the syrup to the egg whites causes them the expand to about 5 times their bulk so make sure you are beating them in a large deep bowl (I use a 5 quart bowl)
  • When I say quickly, I do mean quickly…these set up super fast
  • Make sure all children and pets are away from the kitchen before starting as this syrup can cause severe burns.
  • This is one of those recipes that you cannot interrupt…once you start, you must keep going.
  • DO NOT try to make this on rainy, high humidity or overcast days…it will not set up properly. I thought this was an old wives tale…Hahaha…learned the hard way.

  3. Hi Cat, o idea what this is, never heard of it. Can't make it anyway as we have dampness everywhere. I think England is shrouded with fog, has been like it for ages now :(

    1. It's a very light and yummy candy, Rose...think of a sweet, melt in your mouth meringue. I'm sure you'll have clear skies sooner or later if you really want tot try it. ;)

  6. Sounds yummy, Cat, and as it's Christmas it must be calorie free too! As Jan says, we can't try it here, if it's not foggy it's raining. Could be worse, it could be snowing.

  7. This reminds me of my childhood...my dad used to make divinity fudge...just like his mom dad. Have not thought of that in a long time...now I have to look up and see if the recipes are familiar. Think I will surprise everyone and see if I can make these for our large family celebration. Thanks for bringing back a wonderful memory.

    I LOVE divinity. Alas, too many calories this year! I can dream though. Thanks! Divinity was a real favoirte of my mother's. The recipe is a keeper. So how about the apple roses????

    1. Not really that many calories, Mere...53 for each piece is not bad at all. Haven't made the apple roses and probably won't until after the first of the year...just running out of time. Hope you try it soon and I will make the roses as soon as I get time...and get rid of all the Christmas goodies. ;)

    1. If you get a clear day, this would be a lovely recipe to make for Valentine's Day, Terps...add a bit of red food coloring gel for pink or a bit more for red. Light, sweet and lovely treat for your family. ;)
