Ingredients
- 1 ½ cups white sugar
- ½ cup corn syrup
- 2 tablespoons butter
- 4 cups walnuts
- Zest of one orange
- 1 tablespoon butter for parchment
Instructions
- Line large baking sheet with parchment paper and grease it with 1 tablespoon butter
- Mix sugar, corn syrup and butter in large pot.
- Heat over medium high heat until completely melted and blended.
- Add walnuts.
- Continue to cook, stirring constantly until it begins to caramelize.
- Mix in zest.
- Spread mixture evenly onto parchment paper. Make sure you spread the nuts evenly…you can separate into small clusters.
- Allow to cool completely.
- Place in airtight container.
- Enjoy!!!

ReplyDeleteCould you please remind me yet again what 'corn syrup' is? Did we decide it is like 'liquid glucose' or 'golden syrup'? I can't remember for the life of me.

Yes Ami...walnuts are very good for you and I love them! Corn syrup is liquid glucose.
DeleteYou can substitute honey for corn syrup...measure for measure.
You can also make heavy simple syrup...probably about 2 cups of sugar to 3/4 cup water and bring to a boil to make it the same consistency as corn syrup and then substitute measure for measure.
