Hot Fudge Pie
Ingredients

Hot Fudge Pie
Ingredients
- 1 stick butter, softened
- 1 c sugar
- 2 eggs
- 1 tsp vanilla
- 3 Tbsp cocoa powder
- 1 tsp salt
- 1/2 c all purpose flour
- Preheat oven to 350 degrees.
- Cream together butter and sugar with electric mixer until fluffy, about 3 minutes.
- Add eggs and vanilla and mix well.
- Sift together cocoa powder, salt and flour
- Add dry ingredients to wet and stir until well combined.
- Grease 8 inch pie pan with butter or cooking spray, pour mixture into pie pan.
- Bake 30 to 35 minutes until center is set.
- Hand mix to make it gooey. If you use an electric mixer, it will have more of a brownie or cake texture, rather than “gooey”.
- To soften the butter:
- Shred cold stick with cheese shredder (my preferred method as I always forget to put my butter out to soften)
- Sit at room temperature for a few hours
- Place in microwave for 10 to 20 seconds (DO NOT MELT)

Thanksgiving 2018
Thank you to the military personnel, police officers, firefighters, EMTs, nurses, doctors, medical personnel, and anyone else who is working today to take care of others.
I know I've been MIA for quite a long time. The last 18 months have been extremely difficult and at this point, I'm just trying to get through the upcoming holiday season. Thank you to all who continue to visit...even though I haven't been able to answer your comments. And to those who have checked up on me...thank you so much for your caring. All y'all have no idea how much all your support has meant to me.

Praline Cookies

Praline Cookies
Yield Makes about 2 dozen
Ingredients
- 1 cup firmly packed dark brown sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup chopped pecans
- Preheat oven to 350°
- In a large bowl, whip the butter and brown sugar together until light and fluffy
- Blend in egg
- Add the vanilla extract and beat well
- Mix in flour
- Drop by tablespoon onto parchment lined cookie sheet
- Bake for 13 to 15 minutes
- Cool on baking sheet for 1 minute; then remove cookies to wire racks to cool completely.
- To soften the butter:
- Sit at room temperature for a few hours
- Place in microwave for 10 to 20 seconds (DO NOT MELT)
- Shred cold stick with cheese shredder

Breakfast
I fixed bacon, eggs and biscuits for breakfast this morning and after filling my bar pan with bacon, there were 3 slices left in the package.
Well, that would just make me mad to open the pack of bacon and find 3 pieces.
So, I grabbed another small bar pan and cooked those 3 pieces, too.
Mac said, "I think that's too much bacon..."
It's like I don't even know who he is.....

Eating in the Fifties
- Pasta had not been invented. It was macaroni or spaghetti.
- Curry was a surname.
- A take-away was a mathematical problem.
- Pizza? Sounds like a leaning tower somewhere.
- Bananas and oranges only appeared at Christmas time.
- All chips were plain.
- Oil was for lubricating; fat was for cooking.
- Tea was made in a teapot using tea leaves and never green.
- Cubed sugar was regarded as posh.
- Chickens didn't have fingers in those days.
- None of us had ever heard of yogurt.
- Healthy food consisted of anything edible.
- Cooking outside was called camping.
- Seaweed was not a recognized food.
- 'Kebab' was not even a word, never mind a food.
- Sugar enjoyed a good press in those days, and was regarded as being white gold.
- Prunes were medicinal.
- Surprisingly muesli was readily available. It was called cattle feed.
- Pineapples came in chunks in a tin; we had only ever seen a picture of a real one.
- Water came out of the tap. If someone had suggested bottling it and charging more than gasoline for it, they would have become a laughing stock.
The one thing that we never had on/at our table in the fifties was elbows, hats and cell phones.

Husband Criticizes Stay-At-Home Wife
It’s the age-old saying: The grass is always greener on the other side.
The share of stay-at-home mothers has risen since 2000 among married mothers with working husbands. Since stay-at-home moms don’t earn an actual paycheck for the work they do, it’s not uncommon for resentments to arise between spouses who stay at home and those who go to work.
But is that really fair? Is one “job” more important than the other?
The story below is an urban legend/long-form joke (often seen under the title, “Why A Man Should Never Complain”) that’s been circulating online for many years. The story begins with a wife and mother who stays home and takes care of the kids and chores while her husband works a full-time job.
He goes to the office every day and works hard for his money, until one day he gets fed up with being the sole breadwinner. He prays to God to let him switch places with his wife, so that she can know firsthand what it’s like to work so hard every day.
So, God grants him his ultimate wish — only this husband ends up getting way more than he bargained for, and learns a lesson he’ll never forget.
Wait until you see how this story ends. It’s nothing short of brilliant…
A man was sick and tired of going to work every day while his wife stayed home. He wanted her to see what he went through so he prayed.
God, in his infinite wisdom, granted the man’s wish. The next morning, sure enough, the man awoke as a woman.
He arose, cooked breakfast for his mate, awakened the kids, set out their school clothes, fed them breakfast, packed their lunches, drove them to school, came home and picked up the dry cleaning and stopped at the bank to make a deposit, went grocery shopping, then drove home to put away the groceries, paid the bills and balance the check book.
He cleaned the cat’s litter box and bathed the dogs.
Then it was already 1 P.M. and he hurried to make the beds, do the laundry, vacuum, dust, and sweep and mop the kitchen floor; ran to the school to pick up the kids and got into an argument with them on the way home.
Set out cookies and milk and got the kids organized to do their homework, then set up the ironing board and watched TV while he did the ironing.
At 4:30 he began peeling potatoes and washing vegetables for salad, breaded the pork chops and snapped fresh beans for supper.
After supper he cleaned the kitchen, ran the dishwasher, folded laundry, bathed the kids, and put them to bed.
At 9 P.M. he was exhausted and, though his daily chores weren’t finished, he went to bed where he was expected to make love which he managed to get through without complaint.

I haven’t shared many recipes this year. I remembered, as I was making it today, that I had mentioned to several people that I was going to try and make this for Christmas and they asked if I could share it. So here it is…
Ingredients

Ingredients
- 2 ½ cups granulated sugar
- ½ cup light corn syrup
- ¼ teaspoon salt
- ½ cup water
- 2 egg whites
- 1 ½ teaspoons vanilla
- Combine sugar, corn syrup, salt and water in heavy saucepan. Cook to hard ball stage (260 F / 127 C ) stirring only until sugar dissolves.
- Beat the egg whites to stiff peaks.
- While beating at high speed, gradually stream syrup over egg whites.
- Add vanilla and beat until candy holds its shape (4-5 minutes).
- Quickly drop from teaspoon onto waxed or parchment paper.
- Makes about 48 pieces – depending on size.
- When the syrup mixture gets to approximately 200 F, start beating the egg whites otherwise, they lose the best form
- Adding the syrup to the egg whites causes them the expand to about 5 times their bulk so make sure you are beating them in a large deep bowl (I use a 5 quart bowl)
- When I say quickly, I do mean quickly…these set up super fast
- Make sure all children and pets are away from the kitchen before starting as this syrup can cause severe burns.
- This is one of those recipes that you cannot interrupt…once you start, you must keep going.
- DO NOT try to make this on rainy, high humidity or overcast days…it will not set up properly. I thought this was an old wives tale…Hahaha…learned the hard way.

If you’re like me, you love raw cookie dough. Now you can have that wonderful cookie dough with no guilt. LOL This is also great for those who are concerned about eating raw eggs.
No Bake Cookie Dough Bars
Quick, easy to make and NO oven required!

ADDITIONAL INFORMATION:
Raw flour can contain bacteria and there have been recent outbreaks of E Coli that were found to be in the flour of raw cookie dough. By heating the flour to temps above 160 degrees Fahrenheit, most germs will be killed.

No Bake Cookie Dough Bars
Quick, easy to make and NO oven required!
Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, lightly packed
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 14 ounces sweetened condensed milk
- 1 cup dark chocolate chips
- 1 cup mini dark chocolate chips
- 1 cup chopped walnuts
Instructions
- Line an 8x8-inch baking pan with parchment paper
- Heat flour to 160 degrees
- In a large bowl, whip the butter and brown sugar together until light and fluffy
- Add the vanilla extract and beat again
- Add half the flour and beat just until combined
- Mix in sweetened condensed milk
- Add remaining flour and mix until incorporated
- Fold in mini dark chocolate chips and walnuts
- Scrape dough into prepared pan and press mixture evenly into pan
- Melt dark chocolate chips and drizzle over bars
- Refrigerate overnight until firm
- Cut into squares
- I heat the flour in the microwave but that could be done in the oven
- Especially since these are uncooked, I make sure I use butter and pure vanilla extract
- I use my stand mixer to whip the butter and brown sugar but have used a hand mixer.
- I lightly oil my hands to spread dough in the pan but you could use a spatula.
- Allow the parchment paper to hang over the edges of the pan so it’s easier to lift the dough out of the pan after it sets up.
- Store in refrigerator in airtight container.
- You can use whatever chips you like (semisweet, peanut butter, M&Ms, white chocolate) with or without nuts.
- This makes about 16 bars but can be cut smaller or larger.
- Easily doubled.
ADDITIONAL INFORMATION:

I microwave my flour on high for about 1 ½ minutes, stirring
every 15 seconds to ensure it is heated evenly and all the germs are
killed. After 1 ½ minutes, I pile all
the flour together in the middle of the bowl and check it with a candy thermometer.
You probably don’t have to do this but if you are going to serve these to any
children, pregnant women or people with a compromised immune system, it is
probably a good idea.

Skillet Cornbread
Received a Facebook IM from my oldest son requesting some recipes…his message in part reads “Stat Mom... Mother f*cking stat!!! It's an emergency... DIL hasn't been properly Southernized in the past decade and I take full responsibility... please help Mom?” 
After I picked myself up off the floor and dried my eyes from laughing so hard, I started searching cookbooks.
Since I haven’t shared a recipe lately and had to write them up for son and DIL, thought I’d share one with all y’all.
Ingredients

Ingredients
- 1 cup yellow corn meal
- 1 ½ teaspoons baking powder
- ½ cup flour
- ¾ teaspoon salt
- 1 tablespoon sugar
- ¼ cup melted butter
- 2 large eggs
- 1 cup milk
- Add all ingredients to bowl and beat briskly until well blended
- Pour half of mixture into greased 8 or 9 inch skillet
- Brown over medium heat for 8 to 10 minutes
- Turn and brown the other side
- Repeat with remaining mixture
- Cut into wedges
- Top with pats of butter while hot
- A lot of times, I used evaporated milk instead of regular milk
- The recipe claims it serves 4 – Ha! That’s only 2 wedges per person and with my guys…not nearly enough! I always had to make a double sometimes triple batch.
- Best served hot
- Usually placed the finished wedges in a warm oven while making the others
