After I picked myself up off the floor and dried my eyes from laughing so hard, I started searching cookbooks.
Since I haven’t shared a recipe lately and had to write them up for son and DIL, thought I’d share one with all y’all.
Ingredients
- 1 cup yellow corn meal
- 1 ½ teaspoons baking powder
- ½ cup flour
- ¾ teaspoon salt
- 1 tablespoon sugar
- ¼ cup melted butter
- 2 large eggs
- 1 cup milk
- Add all ingredients to bowl and beat briskly until well blended
- Pour half of mixture into greased 8 or 9 inch skillet
- Brown over medium heat for 8 to 10 minutes
- Turn and brown the other side
- Repeat with remaining mixture
- Cut into wedges
- Top with pats of butter while hot
- A lot of times, I used evaporated milk instead of regular milk
- The recipe claims it serves 4 – Ha! That’s only 2 wedges per person and with my guys…not nearly enough! I always had to make a double sometimes triple batch.
- Best served hot
- Usually placed the finished wedges in a warm oven while making the others

I would suggest you at least make a double batch with your crew, Minelle! Oh and it would be super yummy with the Colcannon. ;)

LOL Jan...that's one way of putting it. I just had to laugh my fool head off. ;) I do believe your crew will like it. If you just make the one batch, be prepared with further ingredients to pop up and make another. ;)

I love corn bread also, Abby. Make this a lot with chili, ham and beans, and smoked sausage and fried cabbage...just to name a few. Oh yes, the only time I make a single batch is when I'm cooking for me alone and I can still eat 1/2 of it by myself (that's the 4 pieces from a skilletful). :D Please let me know if your crew likes it.

One year for Christmas, I found a little cookbook titled A Man, A Can, and A Plan for both my boys as they went off on their own. At least they didn't starve.

LOL Ella...cute cookbook. Both of my boys have been cooking since they were young. By the time they went off on their own, they could cook very well, clean house and do laundry. They both are good cooks and constantly asking for my recipes. :) If you try the cornbread, please let me know what you think.

This looks awfully good, Cuz! :) I'm going to have to try this one out. My honey is not a big lover of things corn like- no grits (I know!!! Sheesh!!!), etc. Around Christmastime, I should have a houseful of willing participants. No question about that one! LOL!

It is awfully good, Cuz! Sheesh...Rob does not know what he is missing...especially with this recipe! That message is a classic...typical of #1 son. Don't know if he has tried this particular recipe yet as it wasn't the first on his list. Think he was gonna try corn fritters, apple fritters and hush puppies first. LOL I'm sure I'll hear something soon.
