Pumpkin Dip

Since it’s getting closer to the holiday season and Clara loves pumpkin, she has asked for some pumpkin recipes.  The following is extremely simple and quick.  Less than 5 and 5 Sunny!  LOL
 
Ingredients
  • 1 brick cream cheese (regular or light)
  • ½ cup packed light brown sugar
  • ½ cup canned or pureed pumpkin
  • 2 teaspoons pure maple syrup
  • ½ teaspoon pumpkin pie spice

Preparation
  1. Mix cream cheese, brown sugar and pumpkin at medium speed until well blended.
  2. Add maple syrup and pumpkin pie spice, and beat until smooth.
  3. Cover and chill 30 minutes.
  4. Suggest serving with apples, pears, and/or graham crackers but you can serve with whatever strikes your fancy. Open-mouthed smile
Notes
  • I just use my electric hand mixer to mix all the ingredients but you could use a food processor if you prefer.
  • For those who don’t have pumpkin pie spice, you can make 8 tablespoons of pumpkin pie spice of your own by mixing together the following:
    • 4 Tablespoons ground cinnamon
    • 4 Teaspoons ground nutmeg
    • 4 Teaspoons ground ginger
    • 3 Teaspoons ground allspice
  • Store any unused spice in an air tight container

  3. I love your recipes that you post and share on your blog. I would have never thought about making a pumpkin dip. Now, I can't stop thinking about it. I'll need to make it soon. Yum!

    1. Sorry Jan...Hmmm...I might have to work on making this dip with other fruits...will let you know. Have you tried the sweet potato dip I shared? It's similar in that it is easy to make and different...I just prefer to serve it hot rather than cold.

  8. Now pumpkin is something I can't remember ever to have tasted before. Not your average Dutch food, and I was raised with average Dutch food. So what I needed was a good recipe. And now I got one, I'm gonna try it.
