Shrimp Fried Rice

Hey y’all…haven’t shared a recipe for a while so thought I’d share my simple recipe for fried rice. 

 

Ingredients

  • 2 cups cooked rice
  • ¼ pound cooked shrimp
  • 2 tablespoons sesame oil
  • 1 small onion, chopped
  • ½ cup thin sliced carrots
  • ½ cup frozen peas, thawed
  • 1 clove garlic, minced
  • teaspoon red pepper flakes (optional)
  • 2 eggs lightly beaten
  • 2 tablespoons soy sauce
  • 2 tablespoons green onions

 

Directions

  1. Heat sesame oil in large skillet or wok on medium heat.
  2. Add onion and carrots, stir fry until almost tender.
  3. Add peas and garlic, stir for another minute.
  4. Crack eggs into pan and scramble, mixing throughout the vegetables
  5. Add rice, stir until heated almost through.
  6. Add shrimp, stir until heated through. 
  7. Remove from heat and stir in soy sauce and optional red pepper flakes.
  8. Remove from heat and top with green onions.


Notes:
  • I use whatever rice I have cooked…usually brown basmati but any will work.
  • Since shrimp is pre-cooked, make sure your rice is almost heated through before adding shrimp.
  • I have also made this with chicken rather than shrimp.
  • If you don’t want any meat, you can increase your vegetables.
  • A friend of mine uses mixed frozen peas/carrots rather than cutting the carrots but I prefer sliced carrots rather than small cubes.

    I drizzle a bit of the sesame oil on top of the fried rice just before serving mine. So good!

  3. I love fried rice. I had a Japanese neighbor years ago when I lived in CA and she taught me her way. Mine was never as good.

    1. Hey Roz...yes, it is very good with chicken...I just use leftover chicken or will just poach a chicken breast or two...depending on how much I'm making. Hope you enjoy. Happy you like my redecorating. ;)

    *Please* don't take this as criticism, but I had to tell you that I got a good laugh when I clicked on your blog this morning because I happened to notice/read the disclaimer at the top of your page about the content being for adults only...with a recipe for shrimp fried rice below it, hahaha. I got to thinking...hmmm, how can we "spice" this recipe up a little bit so that it lives up to the disclaimer? ;)

    1. LOL Autumn...no, I didn't take your comment as a criticism...I'm sitting here laughing my tushie off. The idea that you see the disclaimer and then the recipe...I'm sure your mind was looking for the 'naughty'. *snicker* I have had that "Adult only" disclaimer on the sidebar but as I added things on the sidebar, it was getting pushed down the page so I decided to put it top and center. I don't often post super adult themes but they do happen, along with off color and naughty giggles.

  11. Oh this looks really yummy, Cat! :) I'm going to have to make this asap! I am not supposed to have oil or butter as much as possible, so I might use a non-stick pan and just a tiny bit of oil/or other. I am sure it will still be delicious! I love the pepper flakes idea.     1. Hey Katie...happy you like the recipe...yup, it isn't the typical shrimp fried rice but it's my quickie version and I like a bit of spice. You might consider making it with coconut oil which is healthier and cut it down to 1 tablespoon. If you like spicy, you will probably like a bit more red pepper flakes than what I used...I'm sure you will figure it out. ;) Please let me know how it turns out for you.
