Serves 4.
Ingredients:
- 2 lemons
- 4 tablespoons butter
- 2 cloves minced garlic
- 1 tablespoon fresh chopped parsley
- 1/8 teaspoon dried dill weed
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup chopped green onions, with tops
- 4 tilapia fillets, about 6 ounces each, about 1 1/2 pounds total
Directions:
Preheat oven to 400°
In a small saucepan, combine butter, garlic, parsley, dill weed, salt, pepper, zest of one lemon and 2 tablespoons of juice from the lemon. Heat over low heat until butter is melted and starts simmering. Remove from heat.
Brush a little of the butter mixture in the bottom of a shallow baking dish (line baking dish with foil, if desired) then place tilapia fillets on the buttered area, folding thinner ends under as necessary.
Top fillets with the butter mixture and sprinkle with the green onions.
Bake fillets for approximately 15 minutes, or until fish flakes easily with a fork.
Notes:
- Very easy to double or triple but you will need to increase your baking time by approximately 5 minutes - just keep a close eye on it.
- If you do not care for dill weed, you could substitute basil.
- If you do not have fresh lemons, you can use dried lemon peel and bottled lemon juice.
- Real butter works best but you can substitute margarine if you prefer.
- I serve this with either basmati rice or baked sweet potato fries and a green salad but of course, you can serve it with whatever you want. LOL

I love Tilapia Willie - it cooks up fast and is easy to work with. Had several emails requesting an easier recipe than the others. Didn't think they were that hard but guess some people looked at the ingredients/steps and didn't want to tackle them. :)
